  • 2 large eggs Room temperature eggs blend better into the dough.
  • 1 teaspoon vanilla extract Pure vanilla extract is always preferred.
  • 3 cups all-purpose flour Provides structure; spooning it into your measuring cup helps avoid overpacking.
  • 1 teaspoon baking soda Ensure it's fresh for best results.
  • 1/2 teaspoon salt Balances sweetness.
  • 1 cup sprinkles Use various types (jimmies, confetti) to match your occasion.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and the vanilla pudding mix until smooth.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the sprinkles until just distributed throughout the batter.
  • Drop tablespoon-sized balls of dough onto lined baking sheets, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden but the centers look slightly underbaked.
  • Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to 5 days. Freeze baked cookies for up to 2 months. Cookie dough can be prepared in advance and frozen into balls for later baking.
