  • 1 cup sugar Granulated sugar works best, alternatives like coconut sugar can be used.
  • 1 piece egg Ensure egg is at room temperature for better mixing.
  • 1 teaspoon vanilla extract Use quality vanilla for enhanced sweetness and aroma.
  • 1/2 teaspoon baking soda Helps give the cookies perfect lift.
  • 1/4 teaspoon salt Enhances the overall flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth and creamy (about 2-3 minutes).
  • Scoop spoonfuls of the dough (about 1 tablespoon each) and roll into balls. Place them on a baking sheet lined with parchment paper.
  • Gently press each dough ball with a fork to create a crisscross pattern.
  • Bake in the preheated oven for 10-12 minutes, until light golden brown. They should appear soft, but they'll firm up as they cool.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week, in the fridge for two weeks, or freeze for up to three months. For egg-free, substitute with a flax egg (1 tbsp ground flaxseed + 2.5 tbsp water).
