  • 4 pieces Goose Legs Look for high-quality, organic legs if possible. They will have more flavor and less grease.
  • 1 teaspoon Salt Use kosher salt for seasoning; it draws out moisture and enhances flavor.
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder Adds depth without the sharpness of fresh garlic.
  • 1 tablespoon Thyme Fresh is ideal, but dried can also work.
  • 1 tablespoon Rosemary Fresh is ideal, but dried can also work.
  • 1 tablespoon Olive Oil or Room Temperature Butter Use butter for a richer flavor, ensure it's at room temperature.
  • 1 teaspoon Zest of an Orange or Lemon Optional, brightens up the dish.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Pat the goose legs dry with paper towels and season generously with salt, pepper, garlic powder, and herbs. Add citrus zest if using.

Cooking

  • In a large, oven-safe skillet, heat 1 tablespoon of olive oil or butter over medium-high heat until hot but not smoking.
  • Place the goose legs skin-side down in the skillet and sear for about 5-7 minutes until the skin is golden brown. Turn them over and cook for an additional 4-5 minutes.
  • Transfer the skillet to the preheated oven and roast for about 1.5 to 2 hours, until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  • Let the goose legs rest for about 15 minutes before serving.

Notes

Crispy skin can be achieved by finishing under a broiler for a minute or two, but don't let it char. Store leftovers in an airtight container for up to 3 days. This recipe is naturally gluten-free.
