  • 100 g pre-cooked potatoes, diced Explore red or yellow potatoes for a creamy texture.
  • 2 slices bacon Applewood Smoked Bacon recommended for flavor.
  • 1 small onion, diced Yellow or white onions are great, or add shallots for gourmet touch.
  • ½ piece bell pepper, diced Optional; colorful and packed with nutrients.
  • 2 tbsp butter or oil for frying Use unsalted butter for cooking and extra virgin olive oil for depth.

Preparation

  • Cook the Bacon: In a hot skillet over medium heat, fry the bacon until crispy, about 5-7 minutes. Flip halfway through for even cooking. Transfer to a paper towel-lined plate.
  • Sauté Vegetables: In leftover bacon grease (or use a little butter/oil), sauté diced onions and bell peppers on medium-high heat for about 3-4 minutes until soft.
  • Cook the Eggs: Crack the eggs into a bowl, whisk with salt and pepper, then pour into the skillet. Cook gently stirring until set but still soft, about 3-4 minutes.

Assembly

  • Assemble the Sandwich: On one slice of bread, layer sautéed vegetables, crispy bacon, and scrambled eggs. Top with the second slice.
  • Toast the Sandwich: Melt butter on the skillet and carefully add the sandwich. Cook for about 2-3 minutes on each side until golden brown.
  • Chop & Garnish: Slice the sandwich in half and sprinkle with fresh herbs before serving.

Notes

Ensure butter is at room temperature for easy spreading. Store leftovers in an airtight container for up to 2 days. Can also be frozen for up to 1 month.
