  • 2-3 medium Potatoes (Russet or Yukon Gold, peeled) For a smoother bite.
  • 4 large Eggs Fresh or organic for best fluffiness.
  • 4 slices Bacon Thick-cut preferred for extra crispiness.
  • 1/4 cup Fresh Herbs (chopped, like parsley and chives) Feel free to experiment with herbs on hand.

  • 2 tablespoons Butter or Oil Use unsalted butter for flavor or olive oil.

Preparation

  • Boil the potatoes in a large pot of salted water for about 15-20 minutes, or until tender. Drain and let cool slightly before dicing.
  • Fry the bacon in a large frying pan over medium heat for about 5-7 minutes until crispy. Remove and set aside, leaving the grease in the pan.
  • Cook the diced potatoes in the same pan for about 8-10 minutes until golden brown and crispy.
  • In a bowl, beat the eggs with salt, pepper, and the chopped herbs.

Cooking

  • Crumble the crispy bacon back into the pan with the potatoes and pour the egg mixture over everything. Stir gently to combine.
  • Lower the heat to low and cover the pan. Cook for about 5-7 minutes until the eggs set.
  • Serve hot and garnish with additional herbs.

Notes

Ingredient quality matters; use fresh eggs, good bacon, and seasonal herbs. Store leftovers in the fridge for up to 3 days.
