Preparation

  • Peel and grate the potatoes and onion into a bowl using a box grater.
  • Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  • In a separate bowl, mix grated potatoes and onion with egg, flour, salt, and pepper.

Cooking

  • Heat oil in a skillet over medium heat, coating the bottom generously.
  • Drop spoonfuls of the mixture into the oil, flattening them slightly.
  • Fry until golden brown and crisp, about 3-4 minutes per side.
  • Remove and drain on paper towels.
  • Serve warm with apple sauce.

Notes

For storage, keep leftovers in an airtight container in the fridge for up to 2 days. You can prepare the potato mixture a day in advance. Maintain oil between 350°F – 375°F for frying.
